Last minute Galentine's Day with Lil Epic Design
It's Valentine's day and you may have forgotten to set fancy dinner reservations OR maybe you're riding solo and forgot to set plans with your girls! It's cool, we got you covered! We put together a super easy super LAST MINUTE Galentine's day celebration for a few ladies on our team and we're going to tell you how we did it so you can too! We decorated, attempted to make heart shaped pizzas, and homemade truffles- Yes, we fancy. Curious to see how it all turned out? Keep reading!
but first, DECORATE!
It took us about 15 minutes to put all of our decorations together as well as move things around since we weren't fully committed to the original backdrop we put up. We felt that it was super essential to have a backdrop set up so we focused more on that rather than a table display since we knew that we would definitely have more fun being goofy in front of the wall display as opposed to eating at a table. DO WHATEVER FEELS RIGHT!
part 2: BEGIN THE BRIGADEIROS (brazilian Truffles..)
WARNING: THESE BRAZILIAN TRUFFLES ARE LIKE A MIX BETWEEN A CHOCOLATE AND A CARAMEL AND ARE HIGHLY ADDICTIVE.
You want to start these first, because they do take at least 45 min to set and chill in the freezer in order to roll out into truffle form.
Step 1: Pour the whole condensed milk can into a medium sized pan and set the heat to medium-low. I couldn't find a can opener in our studio so I had to do some major stabbing around our little can. I like the Meadow Gold brand, but that's only because the Brazilian woman who taught me this recipe in college told me that Meadow Gold was the way to go. Feel free to try it with whatever condensed milk can you have available!
Step 2: Place the whole stick of butter (yes, the entire log) into condensed milk in the pan and stir until butter is fully melted and the pan is left with butter infused, sweetened, condensed milk. *yum*
Step 3: Add 3 tablespoons of cocoa powder to the milk and butter in the pan. I actually do a little less (2 1/2) because I like it to taste more subtle, but you can add as much or as little as you want. I would just suggest keeping it less than 3 1/2 tablespoons so you don't loose that caramel like finish.
Step 4: Stir until the end of eternity. I'm joking, but there is definitely a lot of stirring involved! The proper recipe actually calls for a wooden spoon, but since this is so last minute I opted for a plastic one. You want to stir until you see this magical mocha mixture thicken. It will bubble and the cocoa will look separated for a LONG time, but then all of a sudden you hit a sweet spot and the chocolate becomes smoother and the consistency becomes thicker. The rule of thumb to know when it's done and ready to chill is if you drag the spoon down the middle and the two sides stay separate for a few seconds and then slowly combine again.
Step 5. Chill in the Freezer.
PART 3: HEART SHAPED PIZZA TIME!
WARNING: This was our very first attempt at making pizza yet alone heart shaped pizzas! We were figuring it out as we went along.
- STORE BOUGHT PIZZA DOUGH ( I went with pre-made pizza dough from a local grocery store called Caputos)
- TOMATO SAUCE ( I got a tomato basil one for like $2.50 at the local Italian grocery store)
- MOZZARELLA CHEESE
- PEPPERONI (or nahh.. It all depends on you and the toppings you like!)
- OIL SPRAY (for the pan)
STEP 1: Figure out the dough situation. We weren't exactly sure how to start, but we put flour all over our hands and then grabbed the dough out of the dough bag it came in and let it sit in a bowl for about 20 minutes to rise. Then we started kneading and rolling it out.
STEP 2: Keep rolling it out with flour until it becomes less sticky and more solid and structural. Don't quote me on this, I'm sure there is a better way to make pizza dough- but that worked for us!
STEP 3: Shape up your Pepperoni! I used scissors to get the pepperoni heart shape I wanted. I grouped them up to make it easier for me in the long run because individual trimming would have taken forever!
STEP 4: Prep any other toppings you would like to put on your pizza AND CHEESE!
Step 5: Grease up the pan with oil spray and bake! We set it at 375 F and kept it in for about 12-15 minutes or until the cheese got a little burnt up and melty.
THEY TURNED OUT SO GREAT AND WE ALL HAD OUR OWN PERSONAL PIZZAS!
part 4: WE MUSTN'T FORGET DESSERT!
This part is super easy and really fun! We grabbed the chocolatey caramel goodness from the freezer and used a buttered spoon to scoop it out of the pan. Then using our hands we rolled up the scoop into balls and then dipped them into the sprinkles we had! We also used cocoa powder as well to be like... Mature adults or something.
PART 5: PAR-TAYYYYY! .. OR JUST EAT! WHATEVER!
We had a lot of fun trying our hand at making a last minute dinner for Galentine's day! I'm not gonna lie, I was pretty impressed with how the pizza turned out!
